Fried bread, bacon, and tomatoes

Bread is one of the most amazing leftovers we have available. Whether used as breadcrumbs or bread and butter pudding it’s a wonderful ingredient. I’ve always been a little bit obsessed with the way stale bread is used in the Mediterranean in dishes like migas, and panzanella. This is my marriage of both.

Fried bread, bacon, and tomatoes

(Serves 2)

  • 150g bacon chopped
    2tbsp olive oil
    1 red onion finely chopped
    200g stale bread such as ciabatta chopped into 1cm cubes
    100g cherry tomatoes chopped
    8-10 basil leaves torn
    2tsp capers (optional)
  • In a heavy based frying pan heat the olive oil over a medium heat, and fry the bacon and onion until the onion is softened and the bacon starts to brown a little
  • Add the bread, and stir through, frying for 5 minutes, stirring occasionally. Add the tomatoes and cook for 3-5 minutes, until softened a little.
  • Remove from the heat and stir through the basil and capers. Serve as a light meal or a side dish for a barbecue.
